Maize, sorghum and paddy all behave the same way in transit: above roughly 13.5% moisture, respiration and mould take over inside a sealed container crossing the tropics.
Insist that moisture is measured at load, not at the farm gate, and that the figure appears on the inspection certificate rather than only in the contract.
Bagging matters as much as drying. Polypropylene bags on dunnage, with ventilation and desiccant where the route is long, keeps a compliant cargo compliant on arrival.
